JUDY'S BANANA BREAD

This banana bread recipe is one that our family uses often. This recipe holds a special place in our hearts as it is a recipe shared with us from my wonderful sister in law Judy. Our family has not strayed from this recipe since 2005 when sadly Judy was tragically killed in a car crash with my brother while they were holidaying overseas in Canada. A special recipe shared that will be carried on down through the generations.


This little recipe book is something special too as it was my first ever Mother's Day gift from my step daughter years ago. She had picked it out for me from a stall at school and is very special indeed.

Judy's Banana Bread

Pre-heat oven to 170 degrees.

2 cups self raising Flour
3/4 cup brown sugar
2 eggs
4 bananas
pinch baking soda
1 teaspoon baking powder
125 g unsalted butter (softened)
1 tablespoon milk


Mash bananas with the lemon juice
In another bowl mix the flour, sugar, baking powder.
Dice butter into small cubes and rub into the dry mixture until distributed evenly.
Beat the eggs and add to the mix with milk and the bananas.
Combine and then add to greased and lined loaf tin.
Bake for 40 minutes or until the skewer comes clean.

Perfect for school lunch boxes too.
