Dr. Pepper and Jack Daniels Pulled Pork

I've been spending some of the Bank Holiday weekend lining up my next few posts for the blog and spoiler alert - they're all food themed. Since I started seeing Matt, food has played an even bigger part in my life than usual, which is saying something, as I think you guys may have figured out that I love food. A worrying amount.

Like all people who aren't insane, we're huge fans of pulled pork. So we decided to stop spending our money in fancypants restaurants and on readymade dishes and make our own! We found a few recipes online featuring various fizzy drinks and so we decided to try the Dr. Pepper version. Wanna see how we did it? SURE YOU DO.

You will need:

A joint of pork shoulder (ours was about 1.3kg)

A can of Dr Pepper

Bottle of BBQ sauce of your choice - we went for Jack Daniels smokey BBQ

Spices to rub (we cheated and bought a Classic BBQ spice mix but you could use paprika, garlic powder, cinnamon, brown sugar and lots of other things that are good)

1. Put your pork in the slow cooker

2. Rub your pork all over with the spices.

3. Pour your BBQ sauce all over the pork.

4. Pour your DR Pepper all over the pork.

5. Pop the slow cooker on high for about 6 hours or low for 8 hours

6. If you can be bothered, check it about halfway through and drizzle some of the juices back over the pork

7. When it's done, pull off the fat, dry it with kitchen towel, drizzle over some oil and salt and pop in the oven on high for half an hour to make delicious crackling. Or just throw it away if you're a weirdo.

8. With a pair of forks, shred the pork. This is really easy, you just kind of prod it and pull it apart, because it's been slow cooking for so long it should just fall apart.

9. Serve however you like. The most important part is that you cram as much in your face as possible.

Serves 6-8 depending on how hungry you are or how many portions you have each.

I've gotta say, I've eaten a lot of pulled pork. Like a LOT. No, no, I don't think you guys are quite understanding me here. A LOT. But this was the best pulled pork I ever had. The combination of the smokey JD sauce, sweet cherry Dr Pepper and all that awesome meat... yeah, I'm salivating right now. Also, because it was homemade, there was LOADS! We got to have it for lunch the next day, too.

We had ours with brioche buns and sweet potato wedges on day 1 and then loaded on top of garlic McCain wedges with cheese and roasted vegetables on day 2. However, you could add it to so many things like nachos, pasta, burgers, rice, hot dogs, macaroni cheese, steak, waffles, cake... basically anything.
